Protein Carrot Cake Muffins

Ingredients

  • 2 bananas
  • 2 medium carrots, peeled and grated
  • ¼ cup canola oil
  • ¼ cup applesauce
  • cup walnuts
  • cup raisins
  • 2 large eggs
  • ½ cup brown sugar
  • ½ cup honey or agave syrup
  • 1 tsp vanilla essence
  • ¾ cup whole wheat flour or all-purpose flour (try oat flour for a gluten-free option)
  • ½ cup unflavored Klean Isolate
  • 2 tsp baking powder
  • 1 tbsp ground cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

Instructions

1.

Preheat the oven to 325°F / 170°C and prep your muffin tray with a light spray of cooking oil and muffin liners.  

2.

Now your tray is prepped, in a medium-sized bowl mash your bananas, add your peeled carrots, walnuts, oil and applesauce, then begin to mix.  

3.

When thoroughly mixed, add the rest of your wet ingredients into the bowl and continue to mix for 3 minutes, until the mixture becomes light and airy.  

4.

Once you’ve got a nice light and airy texture, begin to sift your dry ingredients into your mixture and fold to combine.  

5.

Fill each muffin lining evenly (you want to aim for them to be ¾ the way full) and bake for 15-18 minutes.  

6.

While they’re baking it’s time to prep your cream cheese frosting.  

 

For the Frosting:

Note: All ingredients should be at room temperature for easy mixing

  1. Add all the ingredients into a small bowl, mix well and store into the fridge until firm.
  2. Slather onto your protein muffins once cooled.
